Introduction

Ingredients

  • 2 kg pork shoulder or butt, cut into serving pieces
  • 2 tbsp olive oil
  • Salt
  • Freshly ground pepper
  • 2 onions, cut into thick slices
  • 1 tsp garlic
  • 1 ripe tomato
  • 1 cup red dry wine
  • 2 apples, peeled and cut into wedges
  • 1 cup dried fruits

Instructions

  1. Start by preparing the bouquet garni: place all the ingredients in a piece of cheesecloth and tie it up.
  2. Heat the olive oil in a pan and brown the pork pieces on all sides. Remove the pork from the pan and place it in a pot.
  3. In the same pan, sauté the onions and garlic for 3-4 minutes, then add them to the pot with the pork.
  4. Deglaze the pan with the red wine, scraping the bottom to release all the flavorful bits. Add the wine to the pot with the pork.
  5. Score the tomato and add it to the pot, along with the bouquet garni, salt, and pepper.
  6. Cover the pot and transfer it to a preheated oven at 180°C-200°C. Cook for about 1 hour and 45 minutes, or until the meat is tender.
  7. While the pork is cooking, peel and cut the apples into wedges. Heat some butter in a pan and brown the apples for 4-5 minutes.
  8. Add the apples and dried fruits to the pot with the pork and continue cooking for another 30 minutes, or until the apples are tender and the fruits are puffed.
