Ingredients

  • 1½ kg lamb, cut into portions
  • 10 large potatoes

  • 2 tbsp mustard
  • 1 cup water
  • Salt
  • Freshly ground pepper

Instructions

  1. Remove the lamb from the refrigerator and let it come to room temperature for a while.
  2. In a bowl, mix together olive oil, lemon juice, rosemary, thyme, mustard, salt, and pepper. Beat with a wire whisk until the mixture is creamy.
  3. Clean, wash, and cut the potatoes into wedges. Place them in a baking dish.
  4. Add the whole cloves of garlic to the potatoes.
  5. Pour the aromatic oil and lemon mixture over the potatoes, reserving 2-3 tablespoons for the lamb.
  6. Toss the potatoes to coat them evenly with the oil and lemon mixture.
  7. Place the lamb on top of the potatoes.
  8. Season the lamb with salt and pepper, and brush it with the reserved oil and lemon mixture.
  9. Massage the meat to ensure it is coated evenly.
  10. Finally, pour the water into the baking dish.
  11. Cover the dish with non-stick paper and aluminum foil, sealing the edges.
  12. Bake in a preheated oven at 200°C for 1 hour.
  13. Remove the cover, reduce the temperature to 180°C, and continue baking for about 1 hour, or until the meat is cooked and the potatoes are tender.
