Introduction

Ingredients
- 1 kg pork (pork neck), cut into bite-sized pieces
- 2 bell peppers, cut into strips
- 1/4 cup tsipouro
- 1/4 cup olive oil
- 1 tsp paprika
- 1 tsp mustard
- 1/4 cup white dry wine
- 1 tsp dried oregano
- Salt and freshly ground black pepper
Instructions
- Cut the bell peppers into strips using a knife.
- Sear the pork in olive oil for 5-6 minutes, until browned on all sides.
- Add the bell peppers and continue sautéing for 3-4 minutes.
- Deglaze with tsipouro.
- Sprinkle with paprika and season with salt and black pepper.
- Dilute the mustard in 1 cup of water and pour it over the pork.
- Once the pork has absorbed all the liquid and is left with only its oil, add the wine and oregano. Simmer for an additional 6-7 minutes, until the pork is cooked through and left with only its oil.
