Ingredients

  • 1 kg pork (pork neck), cut into bite-sized pieces
  • 2 bell peppers, cut into strips
  • 1/4 cup tsipouro
  • 1/4 cup olive oil
  • 1 tsp paprika
  • 1 tsp mustard
  • 1/4 cup white dry wine
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper

Instructions

  1. Cut the bell peppers into strips using a knife.
  2. Sear the pork in olive oil for 5-6 minutes, until browned on all sides.
  3. Add the bell peppers and continue sautéing for 3-4 minutes.
  4. Deglaze with tsipouro.
  5. Sprinkle with paprika and season with salt and black pepper.
  6. Dilute the mustard in 1 cup of water and pour it over the pork.
  7. Once the pork has absorbed all the liquid and is left with only its oil, add the wine and oregano. Simmer for an additional 6-7 minutes, until the pork is cooked through and left with only its oil.
